Ingredients
  

  • 600 grams of lamb
  • ½ cup white beans
  • ½ cup Chickpeas
  • 2 tomatoes
  • 2 medium potatoes
  • 1 medium onion
  • 2 tbsp Tomato paste
  • ¼ tsp ground black pepper
  • 1 tsp turmeric
  • 1 tsp salt

Instructions
 

  • To prevent bloating of beans, you should put Chickpeas and white beans in a bowl of water the night before and let them soak.
  • To start cooking, choose a suitable pot and add the meat to the pot. Now fry the meat for 5 minutes without adding oil to change its color.
  • At this stage, add turmeric to the meat and fry for 2 minutes until the turmeric and meat are well combined.
  • At this stage, remove the Chickpeas and white beans from the water bowl and wash, then add to the pot.
  • Now peel the tomatoes and one of the onions, then add to the pot. Then add 8 glasses of hot water to the pot.
  • Now, increase the heat under the pot and wait for the water to reach the boiling point. After the water boils, turn down the heat and put the lid on the pot.
  • Now, we have to wait for 2 hours for the meat to cook well. After 2 hours, wash the potatoes and add to the pot.
  • At this stage, take the onion out of the pot and mash it well; add it to the pot again. Now fry the tomato paste with 1 tablespoon of oil in a pan separately.
  • add tomato paste with salt and black pepper to the pot. Now we have to wait for 30 minutes for the abgoosht to be ready. Finally, we serve the abgoosht with Sangak bread.

Omani lemon in abgoosht

Omani lemon makes the taste of this food a little sour. If you wish, you can use 2 Omani lemons in this recipe. First, you have to pierce the Omani lemons with a fork, then put them in a glass of water for 30 minutes to remove their bitterness. You should add omani lemon 30 minutes before the end of cooking the abgoosht.
