First, peel and wash onions, then chop finely. Pour 2 tablespoons of oil into a suitable pot. Now put the pot on low heat and add the chopped onion to the pot.
saute the onion for 5 to 7 minutes until it turns light golden brown. Now peel the garlic and grate it in the pot. saute the garlic for one minute.
At this stage, add turmeric to the garlic and onion mixture and saute for another minute to combine. Chop the meat into 2 cm cubes and add to the pot after washing.
Now saute the meat for 5 minutes to change its color. While sauteing the meat, add black pepper. After the meat changes color, add 2 to 3 cups of water to the pot.
Now you have to prepare celery and vegetables. First, chop the celery into 1 to 2 cm pieces. Finely chop the parsley and mint.
Put a large pan on heat and add 2 to 3 tablespoons of oil. Then add celery, mint, and parsley to the pan and saute well to change the color of the vegetables.
The longer the time for sauteing the vegetables, the darker the color of the stew at the end. On average, you should saute the vegetables for 10 to 15 minutes.
Now add celery, parsley, and mint to the stew pot. Add salt and let the stew cook for 2 hours on low heat. If the stew water was low, add 1 or 2 cups of boiling water to the pot.
After adding water, be sure to put the lid on the pot. After 2 hours, the celery stew is ready to serve. In the last 5 minutes of cooking, add lemon juice. Serve celery stew with Persian rice.
